Background
Burns Night is a time to celebrate Scotland’s national poet, Robert Burns, with traditional dishes and festivities. But what if we could elevate these classic flavours into something truly gourmet? Enter the Burnratta Pizza—a sophisticated creation that combines the rich, hearty taste of haggis with the creamy indulgence of burrata. This pizza is perfect for those looking to impress their guests with a gourmet twist on traditional Scottish flavours.
The combination of haggis and burrata might seem unusual at first, but it’s a match made in culinary heaven. The rich, spiced flavours of haggis are perfectly balanced by the creamy, delicate texture of burrata, creating a pizza that’s both indulgent and uniquely Scottish.
Inspiration
The Burnratta Pizza was inspired by a desire to honour Robert Burns while bringing a touch of elegance to traditional Scottish ingredients. Haggis, with its robust, earthy flavours, is a staple of Burns Night celebrations, but I wanted to create a dish that felt a bit more refined and special. By pairing haggis with caramelised onions, mozzarella, and fresh herbs, I’ve created a pizza that’s both comforting and sophisticated.
The crowning glory of this pizza is the burrata—a creamy, delicate cheese that adds a luxurious touch to the dish. Placing a burrata in the centre of the pizza not only looks impressive but also provides a rich, creamy contrast to the hearty haggis and sweet caramelised onions.
Transformation: The Pizza Creation
Transforming these two classics into a pizza is as easy as it is delicious. Here’s how you can create this culinary masterpiece:
Start with the Base: Make your favourite pizza dough. You can check my recipes here, or you can make it from scratch or use a store-bought one if you’re short on time or find it a bit daunting at the moment.
Caramelised Onion Base: Spread a generous layer of caramelised onions over the pizza base. This will provide a sweet, rich foundation for your flavours.
The Haggis: Crumble cooked haggis evenly over the caramelised onions. This will add that distinctive, hearty spiced flavour.
Mozzarella: Sprinkle grated mozzarella over the haggis. This will melt beautifully and add a creamy texture.
Fresh Herbs: Add a sprinkle of rosemary and thyme for an aromatic touch.
The Burrata: Place a whole burrata in the centre of the pizza. This will be the crowning glory of your Burnratta Pizza.
- Bake:
Pizza Oven: Preheat your pizza oven to approximately 400°C. Bake the pizza for about 90 seconds, or until the cheese is bubbly and golden.
Fan Oven: If you’re using a fan oven, preheat it to 200°C. Bake the pizza for 12-15 minutes, or until the cheese is bubbly and golden.
