Happy Burns Night to all! It’s that time of year when we come together with friends and family to celebrate Scotland’s national poet, Robert Burns, with hearty feasts, good company, and a wee dram of whisky.
This year, I’ve put a unique twist on the traditional Burns Night menu with a selection of fusion recipes that bring a modern flair to classic Scottish flavours. Time to take a deep dive into the lineup!
Starter: Haggis and Kale Salad
I kick off my Burns Night feast with a fresh and hearty Haggis and Kale Salad. This dish combines the rich, spiced flavours of haggis with the crisp, earthy notes of kale. Tossed with a tangy dressing, it’s a perfect start to our culinary adventure.

Main: A Quartet of Unique Pizzas
For the mains, I’ve created a quartet of pizzas that blend traditional Scottish ingredients with the beloved Italian classic. Each pizza offers a unique take on familiar flavours, bringing something special to your Burns Night table.
Burns Night Pizza: This pizza features a decadent whisky cream sauce, mozzarella, haggis, and sliced potato and turnip. It’s a poetic blend of Scotland and Italy, perfect for any Burns Night celebration.
Burnratta Pizza: A gourmet creation with a caramelised onion base, haggis, mozzarella, rosemary, and thyme, topped with a luxurious burrata. This pizza is as sophisticated as it is delicious.
Hot Haggis Pizza: For those who like a bit of heat, this pizza combines a classic tomato base with haggis, jalapenos, n’duja, and a drizzle of hot honey. It’s a fiery delight that will spice up your night.
MacCheese Haggizza: Comfort food at its finest, this pizza combines gooey macaroni cheese with mozzarella, Red Leicester, and haggis. It’s a hearty, indulgent dish that’s sure to satisfy.

To finish off my Burns Night feast, I have Cranachan Inspired Croissants. These delightful pastries are filled with a creamy, whisky-infused filling and topped with raspberries and toasted oats. It’s a sweet, indulgent way to end the evening.
